Dibon Cava Brut Reserve N/V ($10.99) X 2
This sparkling wine (Cava) from Spain has a brilliant appearance with constant release of fine bubbles forming a crown on the surface of the glass. Pale straw yellow in color. Tertiary aromas of fresh baking arise from the second fermentation in the bottle, giving it a character of its own. Smooth and silky, its carbonic release gives it freshness and vivacity, resulting in a long finish with notes of apples and pears. You simply can't find a better Cava in this price range.

Located in northwestern Pomerol, just 35 kilometers east of Bordeaux, the 47.5 vineyard hectares of Château de Sales make up the largest estate in the Pomerol appellation and have been owned by the same family for more than 500 years. The average vine age here is more than 30 years old, planted to 70% Merlot, 15% Cabernet Franc and 15% Cabernet Sauvignon in fine gravel and sand soils, some clay, and lots of iron oxide. This is classic Pomerol at a stellar price.
